Vandelay Companies continues its growth across Texas and beyond with the next two Houston-area Hudson House locations in Katy at LaCenterra at Cinco Ranch and in Memorial City at the Greenside development. The Katy location at 2643 Commercial Center Blvd is slated to open early 2027 with the Memorial City location at 1085 Gessner Rd, Suite 290 set to open Spring/Summer 2027.
The upcoming locations of the East-Coast inspired neighborhood restaurant represent another step in the continued expansion of one of Vandelay Companies’ most established concepts.
Since opening the original Hudson House in 2017, the brand has grown from a neighborhood restaurant into a defining concept within the Vandelay portfolio, earning a loyal following for lunch, brunch, dinner and its celebrated happy hour.
This continued growth reflects Vandelay Companies’ broader approach to expansion: identifying strong neighborhoods and markets, investing in each restaurant for the long term and building concepts designed to become lasting parts of the communities they serve.

Known for its polished interpretation of a classic East Coast neighborhood restaurant, Hudson House combines a seafood-driven menu, expansive raw bar, sushi, signature cocktails and timeless American favorites within a warm, energetic setting.
Among the restaurant’s best-known dishes are Hudson’s Avocado Dip, made with whipped avocado, green onion, herbs and ranch chips; The Cheeseburger, featuring thin patties, American cheese, pickles and Hudson’s signature house sauce; Chicken Parm, served with creamy tomato pasta and Reggiano; and the Hudson Salad, made with popcorn chicken, avocado, cherry tomato, bacon, sharp cheddar and green goddess dressing.
Hudson House’s seafood program remains central to the experience, with East Coast oysters flown in daily, a dedicated raw bar and a sushi menu that includes the Sunset Roll, with spicy tuna, cucumber and avocado topped with salmon, lemon and ginger vinaigrette; the riceless Signature Roll, featuring salmon, tuna, crab, avocado, tempura flake and spicy ponzu; the Pressed Ahi Tuna Roll, with tuna sashimi, spicy tuna, avocado, spicy mayo, eel sauce and truffle oil; and Spicy Tuna Crispy Rice with chili mayo and eel sauce.
The beverage program is equally defining, led by Hudson House’s signature “World’s Coldest Martini,” featuring Grey Goose vodka served on tap and chilled to a crisp 10 degrees for an exceptionally cold, smooth pour.
Martini selections include The Classic, Bleu & Gold, made with vodka, olive juice, bleu cheese salt and housemade bleu cheese olives; The Lemon Drop, finished with limoncello foam; and The Espresso, made with vodka, espresso, Kahlúa and Baileys. Additional cocktail favorites include the Frozen Bellini, Strawberry Spritz, Spicy Mexican and a classic Manhattan.
The restaurant will bring Hudson House’s signature design language in both the 6,000-square foot Memorial City location and the 5,600-square-foot Katy location. The design features warm leather booths, a large wraparound bar, a spacious sit-down raw bar and an outdoor patio. The space is designed to balance the familiarity of a traditional New England dining institution with the polished, energetic atmosphere that has become synonymous with the Hudson House brand.
