Eden Roc Miami Beach – a member of the Destination Hotels & Resorts collection – is proud to announce the launch of “15 Steps,” the resort’s signature restaurant and new garden-inspired dining experience, named after the fifteen steps necessary to grow a vegetable, catch a fish and cook the perfect steak. The restaurant is officially set to launch December 1.

Based around the newly planted Sea Spray Organic Garden located within Eden Roc Miami Beach, “15 Steps” is an innovative farm-to-fork concept designed by executive chef Mark Henry and new chef Jeremy Ford.

“15 Steps” will showcase a farm fresh menu, with rotating month-to-month specials focusing on seasonality, sustainability and regional produce. The new Sea Spray Organic Garden will include herbs such as rosemary, sage, mint, and basil, and vegetables including heirloom tomatoes, spinach, brussels sprouts, kale, and celery. Ford has partnered with the most exclusive area farms and local vendors to integrate only top-quality, USDA-certified grass-fed beef and organic produce into the new menu.

Bringing more than 12 years of hospitality experience to the table, Chef Ford will continue to build upon Eden Roc Miami Beach’s legendary standards of excellence while integrating his love of sustainable food and beverage practices. Known for his passion and professionalism, chef Ford joins the Eden Roc team after serving as the chef de cuisine at 3030 Ocean and corporate chef for Dean James Max in Fort Lauderdale.

“We’re thrilled to announce Eden Roc’s new endeavor. “15 Steps” and chef Ford are the perfect new additions to the resort,” says Jim Mauer, general manager of Eden Roc Miami Beach, “We are extremely excited to begin Eden Roc’s next and greatest chapter.”
