During the seventh-annual San Francisco Lamb Jam, Chef Sophina Uong of Calavera won Best in Show, Best in Middle Eastern, and People’s Choice with her Lamb Shoulder Pave Eggplant-Date Lutenitsa, Sumac Pickled Corn, Cherry Bomb Harissa. This marks the third year in a row for Sophina as a San Francisco Lamb Jam victor. 

“It has been an honor to work with the American Lamb Board and participate in their Lamb Jam competition the past four years,” says Chef Sophina Uong. “I love supporting such an amazing product and the wonderful producers behind it.” 

In addition, a panel of local judges blind-taste tested the different local lamb dishes, declaring the following winners across each global flavors category: 

  • Best in Show and Best in Middle Eastern: Chef Sophina Uong of Calavera—Lamb Shoulder Pave Eggplant-Date Lutenitsa, Sumac Pickled Corn, Cherry Bomb Harissa. 
  • Best in Latin: Chef Francis Hogan of Sabio on Main—Seco de Cordero (Peruvian Lamb Stew), Empanada with Aji Amarillo Crema, and Spearmint Chimichirri.
  • Best in Mediterranean: Chef John Griffiths of Bluestem Brasserie—Smoked Lamb Shoulder with Harissa Yogurt, Marinated Green Tomatoes, and Eggplant Salad. 
  • Best in Asian: Chef Jay Abrams of Bi-Rite Market—Char Siu Onigiri & Lap Cheong with Lamb Jam. 

Uong will go head-to-head for the third time with Lamb Jam champions from Seattle, Austin, Boston and Washington, D.C., in an attempt to claim the title of “Lamb Jam Master” at the finale hosted at the James Beard House in New York City this September.
