The fire-kissed cult-favorite festival Heritage Fire by Cochon555 returns to Snowmass Village, Colorado, this summer alongside Grand Cochon. Heritage Fire, the country’s premier live-fire event, includes whole animals roasted over open fires prepared by top chefs paired with premium wines, beers, and spirits. The flagship event of the weekend, Grand Cochon, features 10 chefs competing for the crown with 30 best bites from regional events across the country. Viceroy Snowmass is the official hotel for the weekend and will once again be hosting this epic weekend alongside Related and Snowmass Tourism. The events benefit Piggy Bank, a farm devoted to providing free heritage breed pigs and business plans to emerging family farms. All-Inclusive tickets to the events start at $125 (includes beverage pairings, tax and gratuity) and can be purchased online.

Grand Cochon, the epic finale to the 10-city touring culinary competition, will crown its King or Queen of Porc at Viceroy Snowmass on June 18. The event brings together the 10 winning chefs of the regional competitions and 10 heritage breed pigs for a nose-to-tail culinary showdown. Competing chefs will serve more than 1,200 pounds of responsibly raised heritage pork to a crowd of 20 celebrity chefs and 400 pork-loving epicureans. In addition to the chefs whipping up the most creative dishes to win votes from a hungry audience, Grand Cochon will also feature five winemakers, a Ramen Bar with Wines of Germany, a selection of artisan cheeses, sustainable oysters, a Tartar Bar, a Perfect Manhattan, and 1942 Margarita Experience, a Tiki Bar, a Heritage Rum Cart, and much more to round out the porcine experience. Competing chefs who have already won their way to Grand Cochon include Angie Mar of the Beatrice Inn, New York; Jorge Guzman of Surly Brewing, Minneapolis; Justin Yu of Oxheart, Houston; Troy Gaurd of TAG, Denver; and Walter Manzke of Republique, Los Angeles.

Cochon555’s Heritage Fire will showcase 50 notable chefs and butchers cooking 3,500 pounds of heritage breed animals in celebration of family farming on June 16. Heritage Fire features responsibly raised food alongside traditional outdoor cooking techniques, amazing wines, craft beers, and artisan spirits. The list of heritage and heirloom foods to be featured include dry-aged beef, whole pigs, lambs, goat, lobster, squab, rabbit, duck, fish, chicken, artisan cheeses, oysters, and heirloom vegetables paired with the best beverages. Participating chefs include Mike Isabella and Adam Howard from Mike Isabella Concepts, George Pagonis of Kapnos, Jennifer Carroll of Requin, and Jonah Kim of Yona. Napa Valley favorite, Peter Jacobsen, will be teaming up with Grateful Bread for Team Toast while Hosea Rosenberg and Nate Singer of Blackbelly will work with California Olive Ranch and Thomas Boemer of Corner Table paired Wines of Rioja. Expect exciting things from Host Chef Will Nolan of Viceroy Snowmass, Jason Harrison of Red Maple, Lon Symensma of Cholon, Joshua Pollack of Rosenberg’s Bagels, Alex Siedel of Fruition, Danny Lee of Mandu, William Wright of Helen Greek Food and Wine, Hillary Sterling of Vic’s, Brian Busker of Matsuhisa Vail, Paul C. In addition to sampling over 50 dishes, guests will enjoy artisan cheese, oysters, fried chicken, live music, and a special Mezcal experience paired with authentic fare, in addition to accessing tastes of award-winning Breckenridge Bourbon Punches prepared by 10 winning bartenders from around the country at the tour finale known as “Last Call.”
