Et Voila! is pleased to announce the appointment of Mark Courseille as the new pastry chef for the classic Belgian French bistro located in the heart of the Palisades neighborhood at 5120 MacArthur Blvd, NW, 20016.  He brings to the new position over nine years of international experience.

Additionally, El Voila! will offer a selection of chef Courseille’s desserts for pickup this Thanksgiving holiday.  Guests may choose delights such as the Apple Pie with a Belgium Twist, served with Hoegaarden beer ice cream, or the “Croque Croque” Chocolate Cake, each of which serve up to six people.  For those seeking individual desserts the Pumpkin Charlotte Caramel will be available.  Reservations for Thanksgiving treats must be made by Saturday, November 23rd and the desserts will be available for pickup on Wednesday, November 27th.

Courseille began his training in the cities of Talence and Arcahon, France where he earned multiple diplomas in cuisine, restaurant management and cooking dessert.  Drawing from French culture, Courseille became educated in all aspects of culinary and hospitality management. Continuing his extensive training through France, he eventually made his way to Washington, DC in 2005 where be served for two years as pastry chef at renowned La Paradou restaurant.  In 2007 he was tapped by Michel Richard to serve as pastry chef of his four-star restaurant Citronelle.  In 2009 he was appointed executive pastry chef of Michel Richard Restaurants overseeing the pastries at Michel Richard’s three Washington, DC restaurants: Citronelle, Central and Michel Restaurant at the Ritz-Carlton Tysons Corner in McLean, Virginia.
