The Proprietors Bar & Table on Nantucket opens June 21, joining sibling restaurant American Seasons in celebrating inventive cuisine using the island’s finest ingredients. A collaboration between Michael & Orla LaScola of American Seasons and chef Tom Berry, The Proprietors is located in the heart of historic downtown Nantucket on India Street and will offer a menu of creatively interpreted global cuisine showcasing local ingredients.
Named for Nantucket’s original landowners, The Proprietors embraces the island’s unique history as a whaling hub in both the menu and design. The concept of a “well-traveled palate” is tied to Nantucket’s early cultural exposure from sailors returning home with influences from faraway lands.
Developed and executed by executive chef Tom Berry, most recently of Great Harbor Yacht Club, the menu borrows influences and flavors from international cuisines, while highlighting local produce, meat, and seafood harvested on small Nantucket and New England farms. An adventurous selection of sharable plates and dishes hot off the plancha celebrate local produce, meats, and seafood with a strong focus on imaginative fish, vegetable, and grain presentations. Diners can expect to see dishes playfully combining global flavors with ingredients from local farms and producers raised specifically for the restaurant, including Fluke Sunumono , Shaved “Pork-Umms,” and many others.
The “well-traveled palate” is reflected throughout the completely renovated space, where custom wallpaper and light fixtures from local artists meet reclaimed wooden tables and chairs. Echoing a sophisticated Nantucket home with treasures and knickknacks brought back from travels at sea, the décor has a modern maritime feel in details like the pressed-tin bar front, washed-out metal wall panels behind the bar and a collection of old Delftware.
Serving as its centerpiece will be a sizeable wood-top bar outfitted with 14 seats, a small side lounge, and a heavy focus on handcrafted cocktails and small-batch beers on draft. Thoughtfully developed by award-winning sommelier Orla LaScola, The Proprietors’ wine program has an international bent with a carefully curated selection of European and New World bottles from small family producers, as well as a robust list of wines by the glass, third-carafe and half-bottle. Dedicated growers from across the world dominate the list with wines including Stadt Krems Gruner Veltliner, Billecart-Salmon Brut Rosé, Zyme Amarone, Vina Cobos Bramare Malbec, and Kracher Beerenauslese.
For dessert, freshly pulled soft serve will feature changing daily flavors such as Fromage Blanc with Sea Salt & Vanilla Olive Oil, Organic Salted Caramel Popcorn, and Graham Cracker with Blueberries & Basil.
Two floors of seating, a three-season porch, private dining space and a state-of-the-art kitchen round out the property for a dining experience that’s unmistakably Nantucket.
