Food Concepts International, the parent company of Abuelo’s Mexican Restaurants, announced that it is bringing a brand new restaurant concept to Lexington, Kentucky. The company will be converting its existing Abuelo’s restaurant, located at Fayette Mall at 3395 Nicholasville Road, into a new concept, Oak Springs Grill, which will open this May.

“We are excited to bring this new concept to Lexington,” says Robert Lin, president of Food Concepts International. “Oak Springs Grill will feature contemporary, high quality comfort food, served in an inviting and attractive environment, at a great value—just like you would expect at a new sister concept of Abuelo’s. We know our guests in Lexington will love the incredible, hand-made comfort food and warm ambiance of the new Oak Springs Grill.”

The building will undergo a series of interior and exterior renovations that will take approximately eight to 10 weeks. The new interior will feature rich dark woods, a massive red oak tree and artifacts and décor items representative of the style and grace of Kentucky.

The new Oak Springs Grill menu will feature a broad selection of high quality, made-from-scratch comfort food including an assortment of appetizers and bar snacks, fresh salads, oak-grilled, fresh ground chuck burgers, hand-butchered steaks and tender smoked ribs, plus a number of “House Favorites” such as Chicken Fried Steak, Bacon-Wrapped Pork Tenderloin, Steakhouse Grilled Chicken, Southern Fried Shrimp, and others. Additionally, Oak Springs Grill will feature hand-made desserts, plus an impressive selection of bourbons, wines and other libations.

Jeff Scouler, who has served as Abuelo’s general manager in Lexington since the restaurant first opened in 2006, will also manage the new concept, along with his existing management team. Outstanding Abuelo’s gift cards may be exchanged for Oak Spring Grill gift cards, with a 20 percent value increase of the existing balance. Additionally, Abuelo’s gift cards may be used at any Abuelo’s restaurant nationwide.

“This is an entirely new concept, and the new restaurant will offer an exciting, completely different dining experience for Lexington guests,” adds Lin. “We are very thankful for our guests’ loyalty at Abuelo’s Lexington over the years, and we look forward to seeing everyone at the new Oak Springs Grill.”
