Sugar Factory American Brasserie opened March 4 at the Paris Las Vegas.

The 30,000‐square‐foot space houses an expansive restaurant, beer garden, retail store, and Chocolate Lounge. The sizeable dining room has a traditional French brasserie feel with intricate details and handmade art from local artists, accented by etched mirrors, black and white imagery, and brass finishes. Every piece of furniture in Sugar Factory American Brasserie was custom-made for the venue.

A team including executive chef Michael Sellmann, corporate pastry chef Michael Gillet, and restaurant consultant Bryan Ogden created Sugar Factory’s menu. It features items such as smoked salmon frittata and grilled black Angus filet, alongside an over-the-top dessert menu which includes signature sweet treats such as raspberry lemon brulee pizza and the King Kong sundae with 24 scoops of ice cream.

The Chocolate Lounge is an intimate alcove for chocolate lovers with a vast selection of chocolate fondue options, accompanied by wine, champagne, and liquor pairings. It features chocolates fpom countries around the world, including Ecuador, Madagascar, Bolivia, and the Dominican Republic. Chef Gillet’s one-of-a-kind Red Velvet Fondue will make its debut at the Chocolate Lounge, along with homemade bon bons and truffles, frozen hot chocolates, and chocolate pizzas. Prices range from $28 to $1,000, and at the top end, guests may choose a decadent feast which includes a bottle of Dom Perignon champagne, Dominican dark chocolate, and a gold‐chocolate sphere.

Chateau Beer Garden offers stunning views of the Las Vegas Strip. Located on the second floor with VIP cabanas alongside the edge of the patio, the Beer Garden features pizzas, sandwiches, salads, and snacks to complement its 20 different draught beers, dozens of bottled beers, and a fully stocked bar.
