Palomino Rustico Opens Doors in Washington

Palomino Rustico in Bellevue, Washington, announced that it has officially opened Palomino Rustico at 610 Bellevue Way NE, on Bellevue Way, facing the east side of Bellevue Square. With a rustic menu full of sharable plates, craft cocktails, and select wines, Palomino Rustico takes a simple approach: seasonal, rustic, and chef inspired. The restaurant's team believes in good people, real food, and an authentic gathering place to experience it all together.

"Palomino Rustico is fresh, both in the culinary style and approach to service, as well as the exciting new space," says Miles Hassinger, senior food and beverage manager. "We're excited to launch the concept in Bellevue. We think it is the perfect location, and just what Bellevue's growing food scene is looking for."

To celebrate and toast the new opening and menu, Palomino Rustico will be hosting a Rustico Wine week May 12-18. 

"It is going to be a blast!" says general manager Daniel Wilkins. "We want to celebrate our new look and our new menu. What better way than with $1 house wines for a week? Rustico is all about experiences, tastes, seasonality and people. It is going to be a week long of toasts and celebration."

Palomino Rustico features an ever-changing seasonal menu, including chef favorites such as:

  • The Porchetta: Pancetta-stuffed, rotisserie pork with apple-bean ragout. Pickled fennel and natural jus.  
  • Lemon Sage Chicken: Half a chicken slow cooked with crispy skin in a cast iron skillet with parmesan mash potatoes and chicken jus.
  • Crispy Idaho Trout: Charred Kale, quinoa, pumpkin seeds, sweet truffle win, and a mushroom-artichoke relish.

Palomino Rustico pays homage to simpler times in dining and decor. The remodeled interior is highlighted by a massive custom hand drawn chalk board wall that bookends the north side of the bar.

"Rustico is all about sharing an experience," Wilkins adds. "Whether it is a drink after work, lunch with friends, or a memorable evening dining out, the menu is really designed to share, which is what dining out is all about."
