Heartwood Provisions, a contemporary American restaurant constructed around an intricate pairing program, announced that it opens February 8 at First and Spring in the heart of downtown Seattle.

Chef Varin Keokitvon and Beverage Director Amanda Reed will feature a menu designed primarily to work in pairs. Original beverages have been created to enhance the food, which in turn serves to embellish the drinks.

"Everything we've done in creating this restaurant aims to bring a kitchen and bar together as it has never been done before,” Reed says.

"All in all we want to make great food and serve it with a well-balanced cocktail that inspires conversation," Keokitvon adds. "Amanda and I have worked tirelessly to ensure our guests truly experience the tastes, memories, travels, and ingredients that have shaped our careers."

Heartwood Provisions was designed around an open kitchen concept, and the 88-seat main dining room offers views of the kitchen throughout. Diners at an 11-seat kitchen counter will be especially close to the action. From here they can watch and engage with Chef Keokitvon and his team working the Spanish-designed, locally made Josper wood-burning oven. 

The custom designed bar offers seating for 54 with accents of reclaimed woods, copper, and stone communal tables. The bar itself is intended as a destination for cocktail aficionados and food enthusiasts interested in studying Reed's techniques. Framed by a moving bookcase lined with hand-picked spirits, Reed and team create an evolving selection of cocktails made with seasonal ingredients and house-made syrups, infusions, and tinctures. The wine list features food-friendly selections from the Pacific Northwest and around the world. The craft focused beer selection pours from four tap handles and an assortment of bottles.

Heartwood Provisions menu features shareable, traditional, and a la carte options that will change weekly in flux with the seasons. Entrees range between $10 and $40; beverage pairings range between $4 and $6; and standalone cocktails are offered from $10 to $14.
