ESquared Hospitality, whose concepts include BLT restaurants, Casa Nonna, The Wayfarer, Horchata, and others, announced a partnership with Chef Chloe Coscarelli to launch By Chloe, a fast-casual vegan concept.
A flagship New York City storefront will open in Spring or Summer 2015.
The partnership will combine Chef Chloe, a celebrated vegan chef, health food expert and best-selling cookbook author, with ESquared’s long-standing reputation within the restaurant industry to create the group’s first quick-service restaurant venture.
By Chloe will feature 100 percent vegan, plant-based, and kosher-certified items, made fresh and in-house daily.
The chef-driven menu will include house-made burger patties, handcrafted salads, fresh pastas, seasonal soups, cold-pressed juices, vegan ice cream, and a wide variety of grab-and-go offerings. It will also include freshly baked sweets; with many gluten-free menu options available, and a selection of beer and wine.
The restaurant, located just a few blocks from Washington Square Park, will be open seven days a week, serving an all-day menu as well as weekend brunch. There are plans to feature a multi-purpose take-away window.
