Clique will open Bottiglia Ristroante and Enoteca on April 20, a restaurant focused on its herb-friendly Italian cuisine, robust wine selection, and breathtaking ambiance. The kitchen, helmed by acclaimed chef Brian Massie, will pride itself on savory and approachable cuisine, from crisp salads and antipastos, to fresh seafood and open-range meats. The Tuscan-style food will also feature house-made pastas prepared with a delicate touch, including the house specialty of Papperdella Bolognese, a mouthwatering marriage of braised short ribs, truffle ricotta, and piquillo pepper gravy.

The vibrant ambiance of Bottiglia creates an environment that is bright and lively and as fresh as the cuisine. A shaded oversized patio capable of seating 80 guests wraps around the exterior of the restaurant, offering an equally engaging experience. Meanwhile, a soothing outdoor fire pit helps to create a serene spirit and airy atmosphere that overlooks the calm Las Vegas desert, while a 24-person private dining room is meticulously decorated and has access to the patio. 

In addition to Bottiglia, Clique is also set to open Borracha on May 3, a delicious Mexican restaurant and bar that pays homage to the Day of the Dead. Borracha, opening on Cinco De Mayo, offers Mexican-inspired dishes and features a drink menu with a cache of cerveza's, tequila and specialty cocktails perfect for taking the edge off. Not your typical Mexican restaurant, Borracha's menu prides itself on offering dishes both universal and unconventional. Shareable plates and imaginative burritos litter the menu, as do entrees that are inviting and mouthwatering. Of course, as with any Mexican restaurant worth its salt, the tacos at Borracha captivate palates with tortillas made in house and meats that range from rotisserie chicken, slow-cooked short ribs and fresh Baja fish.

The imagery of the restaurant cannot be ignored, as decorative and festival skulls watch over guests, while a hand-painted floor, dark wooden beams and a wraparound graffiti mural bring life to the space that honors the dead.

“Both concepts are very unique and will bring an exciting dining addition to the Green Valley Ranch Resort roster,” Clique founder Andy Masi says.
