At 5 p.m. Friday, Eschelon Experiences will roll out the welcome mat for all to try its latest restaurant, Bare Bones, a low-and-slow Southern-inspired restaurant located in the heart of Downtown Raleigh. The menu features slow-cooked Southern staples including short ribs, sliced brisket, smoked chicken and pulled pork and non-barbecue favorites such as craft burgers, shrimp and girts, hoppin’ john, and homemade oatmeal cream pies.

The man responsible for the fall-off-the-bone perfection is none other than Eschelon Experiences’ six-year veteran, Chef Taion McElveen. With a serious pork obsession, not only will Chef McElveen be leading the kitchen, he will also be creating house-made rubs and three signature sauces to accompany the restaurant’s menu.

“With this concept, we sought to pay homage to Taion’s incredible talent and menu creation, while also bringing playfulness and heritage to the table,” says Eschelon Experiences founder and president, Gaurav “G” Patel. “Taion makes everything on the menu by hand, in-house—from grinding the burgers, to creating the rubs, all the way to mixing the ketchup on the table.”

“The Bare Bones menu was created with a heavy Southern influence meant to bring people together. It’s the kind of food that sticks with you, that comforts you and makes you feel good. And it’s the type of food you want to share with your friends and family. So consider our menu an invitation to join our family around the table,” continues Patel.

The full bar will feature 24 beers on tap, many of which are native to North Carolina breweries, and a vast bourbon selection. Once guests pick their brew, they can purchase and fill their custom Bare Bones growler, and prepare to be entertained. Surrounding the restaurant are a variety of classic games, welcoming its patrons to rack-up for a round of billiards, challenge one another in ring hook, darts, shuffleboard and more.

The restaurant’s interior features a warm and comfortable balance of North Carolina textiles and vintage sports décor. From wooden planks to exposed lighting and industrial metal accents to vintage sports pennants and wall-lined TVs, Bare Bones has something for everyone.

Monday to Wednesday from 11:30 A.M. to 10 P.M.

Thursday to Saturday from 11:30 A.M. to midnight

Sunday from 10 A.M. to 10:P.M.
