Downtown Miami’s popular waterfront restaurant and bar Verde at Pérez Art Museum Miami (PAMM) has launched a new winter menu that includes brand-new dishes plus some reimagined favorites. Helmed by the culinary experts at Constellation Culinary Group and Executive Chef Loris Navone, the new menu showcases seasonal ingredients, fresh produce, small and large plates, hearty salads, homemade pizzas and tempting desserts alongside a selection of handcrafted cocktails.

Small plates include Smoking Swordfish Carpaccio ($20), with ajo blanco and petite pickled vegetables; Salmon & Avocado Tartare ($19), featuring spicy mayo, fingerling chips and salmon roe; Shrimp Acaraje ($18), warm shrimp served with black-eyed peas fritter, pickled vegetables and crushed avocado; Garden of Baby Carrots ($15), candied heirloom carrots with carrot and peanut purée and mushroom soil; and Butternut Squash Bisque ($14), with candied butternut squash and pumpkin seeds.

New large plates include Honey Garlic Salmon ($32), roasted salmon served with mustard sauce and garlic spinach; Mediterranean Sea Bream ($34), a tail-on whitefish gratin with caramelized lemon, Italian salsa verde and frisée salad; and Mushroom Risotto ($24), roasted king trumpet mushrooms with young garlic purée and Parmesan.

For pizza enthusiasts, two new pies have debuted this season, including the Fugazza ($16), with Parmesan and fontina Mornay, caramelized onions, oregano and lemon zest, and Pancetta Maple ($18), topped with crispy pancetta, white cheddar, roasted apple and rosemary.

Guests with a sweet tooth can indulge in the latest desserts: Chocolate Ganache ($14), with flavors of coffee, avocado, lime curd and licorice, and Warm Apple Tart ($16), made with caramelized apples, pine nuts and currants topped with an ice cream flavor of the day.

For brunch, new dishes include the Potato Leek Galette ($21), farm egg with caramelized leeks, potato, Gruyère and a side salad, and the Acai Bowl ($19) with seasonal fruit and nuts.

While dining alfresco, guests can bask in South Florida’s perfect winter weather while gazing at the panoramic views of Biscayne Bay in the heart of Downtown Miami. The expansive patio leads out onto the museum’s sculpture garden and Maurice A. Ferré Park.
