Thirsty Lion Gastropub, the rapidly expanding concept specializing in scratch-made cuisine, is broadening its footprint into the heart of the West Valley with a new location at Westgate. The brand will debut the largest Thirsty Lion design in Arizona with a two-story restaurant and rooftop patio complete with indoor/outdoor bar. The popular gastropub will be located on the corner of West Coyote and Sunset Boulevard in Glendale and is set to open doors in December 2022. This will be the fifth Arizona location for Thirsty Lion.
The 9,800 square-foot restaurant will boast a spacious dining room and seating for 400 offering guests a comfortable and unique gathering place. The interior features an open kitchen concept, a full-service bar, and flat screen TVs to complete the elevated feel of a traditional gastropub. On the second story, guests will have access to an open-air dining experience, plus a large outdoor bar with ample seating for large parties. The 5,251 square-foot downstairs patio will seat 266, the upstairs 1,378 square-foot patio seating for 90, providing the perfect new place to enjoy outdoor dining in Arizona.

Thirsty Lion serves a signature menu comprised of eclectic cuisines, with an emphasis on local ingredients and bold flavors. The “seasonal menus” focus on featuring unique ingredients based on the time of year. The bar features a large selection of unique craft cocktails, wide variety of beers on tap, many of which are local to the Valley, and at least 20 different wines by the glass.
Since opening its first location in Arizona in fall of 2011, Thirsty Lion’s have quickly become one of the company’s most successful locations, which include nine existing restaurants across Oregon, Arizona, Colorado and Texas. Thirsty Lion and Concept Entertainment Group (CEG) experienced substantial growth in the last few years opening two new units in Arizona, Desert Ridge Marketplace in 2019 and Chandler Viridian in 2020 and moved its headquarters to Scottsdale, Ariz. During the pandemic CEG launched Central Kitchen, an online virtual food hall operating out of Thirsty Lion locations, to provide guests with diverse cuisine options from one central kitchen. Four virtual brands were developed for Central Kitchen, each featuring distinctive culinary directions and scratch-made food available for takeout and delivery from the one website.
In 2021, FSR magazine named the restaurant a Next-Gen Casual Restaurant Brand described as, “the inaugural list of 20 restaurants under 20 units with potential to scale far beyond their home markets and change the larger dining landscape.”
