Aphotic, the Michelin-starred seafood restaurant from Chef Peter Hemsley, just launched its new seasonal winter menu. 

The 11-course tasting menu ($195/person) will continue to highlight often-overlooked and underutilized fish varietals, as well as a curated selection of luxury seafood. Guests can expect dishes like Prickleback Eel Croquettes and Thornyhead Escabeche with a Miso Broth. Reservations are available on Tock.

Continuing to emphasize their in-house distillation program, Bar Director Trevin Hutchins has also updated the cocktail menu to include new offerings like the Bird (cucumber cachaça, melon apéritif, falernum, brokaw farms passion fruit & avocado, coconut cream) and the Perla (apple ‘switched’ san bartolo mezcal, fig leaf palmilla, cap corse blanc, faccia bruto centerbe).
