Merriman’s Hawaii has appointed Lance Kosaka as the Restaurant Chef for Merriman’s Honolulu.
Chef Lance Kosaka joins the Merriman’s Honolulu team after 17 years at The Pineapple Room, led by Alan Wong. As Restaurant Chef of Merriman’s Honolulu, Chef Lance will lead the kitchen staff, which is like a family at Merriman’s, when it comes to problem solving in the kitchen, managing staff, and even designing new recipes including menu planning and plate presentation.
In his last restaurant, he began his career as a dishwasher and prep cook and was gracefully able to work his way to Executive Chef which he held for seven years. Chef Lance brings culinary skill and leadership to our team at Merriman’s Hawaii.
