Auberge Resorts Collection, the award-winning portfolio of one-of-a-kind luxury hotels, resorts and residences, is pleased to announce the appointment of Nicholas Restivo as Executive Chef of Madeline Hotel & Residences, Auberge Resorts Collection, the premier alpine resort in Telluride, Colorado, owned by Flynn Properties Inc.

With over two decades of experience in some of the nation’s most esteemed kitchens and hospitality venues, Restivo brings a bold culinary vision, refined technique, and a deep-rooted passion for soulful, place-driven cuisine. His journey began humbly at a pizzeria at age 15 and has since evolved into a distinguished career, including high-profile roles at iconic properties such as The Ritz-Carlton South Beach, Baccarat Hotel, and The Knickerbocker in Manhattan. His trajectory is a testament to both his unwavering grit and commitment to excellence.

In his new role, Restivo will oversee all culinary operations at Madeline Hotel, including signature restaurant Black Iron Kitchen + Bar and the intimate Timber Room lounge, as well as the hotel’s event and catering programs. Known for his hands-on leadership and intuitive style, Restivo’s arrival signals an exciting new era for the resort’s food and beverage offerings.

Restivo most recently served as a consulting chef on a variety of restaurant development and private dining projects, following leadership roles at the Knickerbocker Hotel in New York under the Charlie Palmer Group, Baccarat Hotel, Pine Hollow Golf Club, and Kimpton’s The Muse. His background also includes experience working alongside Michelin-starred chefs Gabriel Kreuther and Fortunato Nicotra, as well as holding top positions with The Ritz-Carlton, Marriott International, and Great Performances Catering.

Beyond traditional hotel settings, Restivo has helmed culinary programs for some of the world’s most prestigious events and clientele. These include the Tony Awards, Emmys, Grammys, Super Bowl, Heisman Trophy, and private events for Apple, Google, and Wine Spectator.

Restivo is a graduate of Sullivan University’s Culinary Arts & Professional Catering program and draws inspiration from his global travels and love of classical philosophy. A dynamic leader in modern American cuisine, he remains dedicated to delivering exceptional culinary experiences rooted in craftsmanship, culture, and creativity.
