Innisfree Hotels, a premier hotel owner-operator along the Gulf Coast, announced that its new upscale-casual restaurant Salt at the Hilton Pensacola Beach opened to the public on May 16.

Guests can expect an elevated, fine-dining experience at Salt, whether they’re catching up with friends over an al fresco lunch on the restaurant’s patio or celebrating a special occasion in the restaurant’s welcoming dining room.

Salt’s talented team of experienced culinary experts includes Innisfree Hotels’ Corporate Food and Beverage Director Manuel Rodriguez, who credits his coastal upbringing as inspiration for the way Salt merges Mediterranean flavors with local ingredients from the Gulf. Along with Italian-trained chef Humberto Mendez and a highly skilled kitchen crew, Salt is crafting dishes that have already been delighting diners, like: 

  • Traditional Mediterranean dips like hummus, baba ghanoush, tzatziki and “crazy feta” are stone oven baked with fresh garlic and served with grilled pita and extra virgin olive oil. 
  • Crab cake appetizer with authentic Chesapeake blue crab, remoulade sauce, and a touch of beurre blanc. 
  • Signature Salt burger hand-crafted from 1855 Black Angus beef, known for its unparalleled quality and flavor. 
  • Arroz a la marinera features copious amounts of local Gulf shrimp, calamari, mussels and scallops cooked in a rich seafood broth and served with rice that’s been threaded with saffron and infused with sherry.
  • Roasted Duroc pork chop, grilled filet mignon, cowboy steak and a Tomahawk steak meant to share are impressive non-seafood entrees.

In addition to delicious food offerings, Salt has a craft cocktail menu with signature drinks like Salt of the Earth (Maestro Dobel tequila, Cointreau, sumac and beet), Three Card Monte (Amaro Montenegro, Old Grand-Dad Bonded and housemade fig bitters), and Barbados Slim (falernum, pineapple, orange and orgeat) that are part of Salt’s full culinary experience.

Salt was designed with coastal inspiration of comfort and relaxation, focusing on natural materials, rich and vibrant colors, and striking lighting. Pecky cypress, a native Florida wood featuring natural holes and indentations, brings an organic feel throughout the restaurant. While dining, guests are surrounded by stunning works of art, curated by Luna Fine Arts Gallery and part of the Innisfree Private Art Collection, that have been specially commissioned from local artists and specifically designed for Salt. The artwork ranges from pencil drawings, paintings, sculptures and ceramics that add to the restaurant’s marriage of global and local.
