The Florida Department of Citrus’ new free recipe book, Taking Citrus in New Directions, showcases the American regionalism trend sweeping across menus. In past years, menus have focused on global flavors; however, chefs and operators are now turning to the rich culinary heritage of the United States for inspiration. This trend stems from the ongoing movements surrounding local, regional, and seasonal food sourcing along with a desire to support local economies.

In today’s recovering economy, consumers continue to be conscious and cautious with their dollars. Diners are hesitant to spend on extremely risky dishes; American Regionalism, however, provides the best of both worlds. Iconic dishes are familiar enough while regional flavors and indigenous ingredients provide a twist.

The versatility of Florida citrus allows for flawlessly integrated dishes throughout the menu with regional American flavors. Recipes include chicken chile relleno with Florida orange salsa verde, New England lobster boil with Florida orange butter sauce, and Florida orange red velvet whoopie pies.
