Hot off the official start of summer, Eureka! Restaurants in Boise, Las Vegas, and Roseville are relishing in the warmer months with all-new menu items that are sure to bring the heat and satisfy the tastebuds. From crisp, refreshing salads to hearty short ribs and breakfast burrito only available on the weekends, there’s something for every guest to enjoy.

New items include:

  • Chipotle Burger ($17.50): Made with a Havarti-crusted bun and topped with cheddar, lettuce, guacamole, and chipotle aioli.
  • Mandarin Chicken Salad ($18.50): Using Boston lettuce, this refreshing summer dish features fried Fresno chiles, carrots, green onions, slivered almonds, oranges, cilantro and served with a soy dressing.
  • Braised Short Rib ($27): The spicy entrée is served with charred Fresno chiles, potato puree, wilted spinach and a red wine short rib au jus. Available after 5 p.m. only.
  • All-World Breakfast Burrito ($16): Available on the weekends only from 11 a.m. to 3 p.m. this worldly classic includes a cheese-crusted tortilla, crispy potatoes, eggs, bacon, avocado, salsa, and green onion to help get the day started.
