El Naranjo, Austin’s celebrated Oaxacan restaurant, helmed by James Beard Award-winning Chef Iliana de la Vega and her partner Ernesto Torrealba, welcomes Chef Cynthia Martinez for an intimate and exclusive Guest Chef Dinner. Chef de la Vega and Chef Martinez will introduce a curated selection of Mexican cuisine celebrating the food and drink of Michoacán.

Says Chef de la Vega, “I am so excited to welcome Chef Martinez into our kitchen and continue to celebrate the authentic flavors of Mexican cuisine. I am positive that our guests will enjoy the combination of flavors we have put together.” 

Chef Martinez has been integral to the culinary world for over 27 years. She currently heads  La Conspiración de 1809 in Morelia, Michoacán, a historical gem in the heart of Mexico. With an extensive culinary background, Chef Martinez has participated in national and international dinners, red carpet events, gastronomic festivals, and more, including ones in Prague, the Czech Republic, Oaxaca, and Mexico City.

“Creating a menu with Chef de la Vega is an honor, and I hope each guest leaves with lasting memories of this intimate dinner. I am especially excited for us to present our Chile pasilla de Queréndano as these chiles have a mild heat but bring such flavor to the dish,” says Chef Martinez.

Bocadillo Cecina de tierra caliente, guacamole con macadamia y charales

Dried beef “Tierra Caliente” style, guacamole with macadamia nuts, and small dried lake fish

Segundo (Second Course)

Ensalada Catrina: lechugas varias, ate, laminilla de ate,amaranto, uva y aderezo de queso Cotija

Catrina Salad: mixed greens, quince fruit paste, amaranth, grapes and Cotija cheese dressing

Crema de ajos, jitomate y jamon serrano

Chile pasilla de Queréndano relleno de uchepo
