Foodservice forecasters across the country predict that Latin American cuisines will dominate 2013 menu flavor profiles. Customers are interested in going beyond Latin standards, says Technomic, Inc., pointing to the American diner’s inclination for in depth exploration of a region’s cuisines. “Those [diners] who favor Mexican are now looking south to Brazil, Argentina and Peru. We’ll see mainstreaming of South American-style grilled meats, chimichurri sauce, ceviche, fusion seafood dishes, and iconic drinks.”
Dole draws on the affinity of fruit with popular South American foods and ingredients to develop their 4th annual DOLE Fruit Pairings. Revisiting the popular cuisines (Mexico) and adding current culinary hotspots (Peru, Argentina, Brazil, and Chile), Dole matches favorite fruits with iconic foods from each country for this year’s evocative combinations.
