C&S Seafood and Oyster Bar, holds the honor of becoming the first restaurant in Georgia to offer Tyee King Salmon, an exquisite fish celebrated by the finest chefs around the world. On February 3, join C&S Seafood and Oyster Bar in Sandy Springs and Vinings as they serve Tyee King Salmon, both raw and cooked, for the first time. The fish will be split between the restaurants’ two locations and will be offered on a first come, first serve basis while supplies last.

Tyee Salmon, meaning “King of Kings”, is one of the rarest fish in the world. These extraordinarily large King salmon make their way to C&S Oyster Bar via New Zealand King Salmon, who have been perfecting their sustainable husbandry practices and breeding expertise for over 30 years. Their genetically distinct breed, called Ōra King, is different from any other King salmon found in New Zealand or elsewhere on the planet, and is sought after for its high fat content ranging from 35-40%.

The Ōra King Tyee breeding program begins in the waters flowing from Te Waikoropupū Springs in Takaka, New Zealand. These springs are home to the clearest, freshest waters in the world. Fertilized eggs are hatched at a freshwater facility and within their first year of life, smolt are transported to sea farms in the Marlborough Sounds to mature in fast flowing waters. The fish are hand-fed an all natural diet, free of GMOs, hormones, colors or other additives, every 45 minutes for their entire life. The highest quality salmon are hand-harvested, hand-processed, and hand-graded, comprising less than 1% of all King salmon produced worldwide. Ōra King harvests and sells just 10-15 Tyee per month, ensuring the product is treated with the utmost care and respect.

The controlled environments in which the Tyee are bred, raised, and harvested ensures a consistent product of the most superior quality. The naturally high oil content in Ōra King salmon can be seen in the striking marbled fat lines within the bright orange flesh, instantly drawing comparison to Wagyu beef. Its texture can be described as having a distinctive ‘bite’ followed by a creaminess from the rich oil profile, which keeps the salmon moist and protects it from overcooking. Buttery and soft, it is delicate on the palate, elegantly balancing sweet and umami flavors.

New Zealand King Salmon’s operations are independently audited, and the following certifications and ratings support ongoing and substantive efforts to maintain environmental integrity:

Certified as the only open-ocean king salmon farm in the world to ever have a four-star practice rating, the highest designation in the Global Aquaculture Alliance’s ‘Best Aquaculture Practices’.

Achieved Aquaculture Stewardship Council’s certification which focuses on environmental and social welfare, as well as animal health and welfare.

The highly respected Monterey Bay Aquarium’s consumer guide, Seafood Watch, has given New Zealand King Salmon a ‘Best Choice’ buy rating for consumers.
