Colwen Hotels announced leadership appointments for the 2023 season at Inn at Diamond Cove and Diamond’s Edge Restaurant located on Great Diamond Island in Casco Bay, Portland, ME. Gena McGill, Hotel Manager, William McCoy, Corporate Food and Beverage Operations Manager, and Todd Cosgrove, Executive Chef, have been appointed by the Portsmouth-based hotel company.
Gena McGill, a California native, is a seasoned hospitality professional who delivers exceptional service to guests. Her previous experience includes Front of House Manager and Concierge at Boothbay Harbor Country Club and the Oceanside Golf Resort, where she managed hotel reservations, wedding and event planning, wine dinners, dock space, and duties in the restaurant. Prior to pursuing a hospitality career, McGill spent 16 years as a Police Officer with the Modesto Police Department.
“I have found my dream job with the Portland Collection,” says McGill. “Combining my love of New England, the ocean, and ability to create exclusive, unforgettable experiences to all guests who come to visit the Island and the Inn at Diamond Cove.”
With more than 25 years of experience in the culinary industry, William McCoy boasts an impressive resume. His background includes appointments as a Chef with the Sanibel Harbour Resort and Spa; he then spent a decade with Marriott, and was later promoted to Director of Food & Beverage during his 12-year tenure with Hilton. He most recently worked with the management team at Doubletree Resort & Spa Ocean Point-North Miami Beach. He has also showcased his culinary expertise on a global stage, cooking for Team USA in the 2008 Beijing Summer Olympics and the 2010 Vancouver Winter Olympics, and as a Chef for the PGA Tours in Florida and for the Daytona and Homestead NASCAR Races.
“I look forward to making the Inn at Diamond Cove & Diamond’s Edge Restaurant & Marina a memorable experience for years to come,” says McCoy. “Having been with the management team for some time now, I know the season ahead will be a great one.”
Todd Cosgrove, an Ohio native, is thrilled to join Colwen Hotels as Executive Chef of the Inn at Diamond Cove & Diamonds Edge Restaurant & Marina. He discovered his passion for the culinary arts while interning at Linville Ridge Country Club in North Carolina and decided to pursue a career as a Chef. He worked his way up the ranks in the kitchens of numerous restaurants and country clubs. Previous appointments include Executive Chef at Park Meadows Country Club in Park City, Utah and Executive Chef at The Bethel Inn in Maine. Cosgrove holds a B.S. in Commercial Recreation Management with a minor in Business Marketing from Appalachian State University.

Inn at Diamond Cove opens on May 25, 2023 and is currently accepting reservations through September 30, 2023. Diamond’s Edge Restaurant will open June 1, 2023 with limited hours.
Inn at Diamond Cove was recently inducted into Historic Hotels of America®, the official program of the National Trust for Historic Preservation, one of more than 300 hotels and resorts throughout the country recognized for preserving and maintaining its historic integrity, architecture, and ambiance. The Inn opened in 2015, following a careful restoration of the historic buildings that preserved its authentic details and original character while transforming the historic barracks into a holiday destination.
