Chef Lon Symensma and his team at ChoLon Central Park have launched a new sushi and raw bar counter where they will serve a masterfully crafted sushi menu.
“Starting a program like this is something we’ve wanted to do for a long time, and we are so excited to bring it to the ChoLon family,” says Chef Symensma.
ChoLon has brought on Sushi Chef Will Richardson to assist in the sushi creation and collaborate with Symensma on the seasonal menu. Richardson has a background in Edomae style sushi. ChoLon’s new raw bar and sushi counter utilizes fresh fish that you can find in a traditional sushi restaurant while being conscientious of the environmental impact of the fish they serve.
New menu items include a carefully selected sake list to pair with hand roll Sushi Cones like Spicy Tuna with wasabi crunch and pickled jalapeno, Yuzu Salmon with radish sprouts and tobiko and California Roll with brûléed crab and avocado. During ChoLon’s Happy Hour, all Sushi Cones are five dollars each.
On Sundays, the weekly special will be ChoLon’s “Cho-makase,” a play on the Japanese phrase “Omakase” meaning “I’ll leave it up to you.” Every Sunday, ChoLon guests have the opportunity to visit ChoLon Central Park and enjoy a variety of sushi dishes made using the freshest selections with global and seasonal inspiration. The Cho-makase menu will vary weekly but guests can expect to find inventive sushi creations like egg yolk and soy marinated tuna spirals and Thai snapper with coconut lemongrass sauce and cilantro jalapeño oil.
