Chef Troy Guard is honored to welcome celebrity guest Chef Rocco DiSpirito to the Mile High City for an exciting two-day event, set to include a fun-filled night of Mexican fusion at Los Chingones, and an exclusive dinner at Guard & Grace. 

Chef DiSpirito, a James Beard Award winner, three star recipient from the New York Times and nationally acclaimed chef, will fly in to join Chef Guard in welcoming guests to Los Chingones and Guard & Grace as both chefs prepare unforgettable meals in celebration of local food, and raising funds for both Community Foundation Boulder County supporting Marshall Fire Relief and We Don’t Waste. 

Says Chef DisSpirito, “I am excited about joining Chef Troy Guard for two days of food, fun and fundraising and spending time in one of my favorite cities!” 



Chef Troy Guard and guest Chef Rocco DiSpirito’s collaboration kicks off with a patio party at Los Chingones, including an evening of drinks, small bites, and dessert. Voted among the best rooftop bars in Denver with incredible views of the Rocky mountains, Los Chingones’ impressive 90-seat rooftop setting is the best way to welcome Chef DiSpirito to Denver.

Los Chingones House-made molé cookie

Says Chef DiSpirto about his drink special the Happy Daze Blanco Lagerita “Every day I wonder ‘What am I going to drink today?’ A margarita? A beer? How about the best of both in one glass? This is the ultimate mash up. Part ice cold lager, part margarita. The limoncello adds a playful Italian touch.”

All proceeds from this night’s event will go towards We Don’t Waste, an organization that works to reduce hunger and food waste in the Denver area by recovering quality, unused food from the food industry and delivering it to nonprofit partners, such as food pantries, soup kitchens, shelters, schools, daycare programs, and more.

Guard & Grace will host guest Chef DiSpirito as he works alongside Chef Guard to bring guests a one-of-a-kind dining experience. Chef DiSpirito will prepare courses from the sea, and Chef Guard will arrange courses from the land. 

 With ingredients from local farms and purveyors, this collaborative menu is a celebration of the bounty available here in Colorado. Chef Guard and Chef DiSpirito are strong advocates of shopping and supporting local, as well as farm, garden and ocean to table concepts, and this is highlighted in their decadent menu. 

Chef Guard’s menu highlights include:

Roasted squab / pate /agnolotti / black garlic / cherry

American wagyu robata / daikon / dashi / yuzu

Colorado lamb rack / rosti / hearts of palm / dragon sauce

The evening’s festivities also include a wine and cocktail complement, with each libation perfectly paired with its designated course. Hand-selected by TAG Restaurant Group Partner and Beverage Director, Nikki Guard, the cocktail pairings include creative spirits and a carefully crafted selection of wines.

In order to raise the most funds for the Marshall Fire Relief, Guard & Grace will offer special seating options for the evening, as well. Reservations will be accepted for the exclusive Chef’s Table, seating 10,  central to the evening’s action and boasting a view of the kitchen at work. 

Reservations for the Wednesday, June 15 event will be accepted from now until the restaurant is sold out.

Exclusive Chef’s Table

Tickets to the Chef’s Table are $1000.00, and they include the cocktail pairing menu with the addition of a signed copy of Chef DiSpirito’s cookbook, Rocco’s Healthy & Delicious: More than 200 (Mostly) Plant-Based Recipes for Everyday Life, as well as an exclusive welcome reception prior to the general ticket admission. The welcome reception will include several bites limited to the Chef’s Table tickets as well as a champagne toast with the Chefs. 

All proceeds from this night’s event will go towards the Boulder Community Foundation, which is helping those affected by the Marshall Fires from earlier this year.
