Chef Adrianne Calvo is looking to the future as her two latest projects create nearly 200 new jobs in South Florida. Redfish by Chef Adrianne at Matheson Hammock Park opened Tuesday, June 23, and a relocation for her celebrated original concept, Chef Adrianne’s Vineyard Restaurant & Wine Bar, opened August 10.

Forced to close after devastating damage from Hurricane Irma in September 2017, Redfish is Coral Gables’ only waterfront restaurant offering secluded water views of Biscayne Bay and Downtown Miami from within the historic Matheson Hammock Park. Chef Adrianne and her team brought the historic property back to life in 2020 with indoor and outdoor seating and four waterfront cabanas. A rooftop observation deck will also soon be available for diners wanting to catch a glimpse of the can offer.

Chef Adrianne and Redfish’s executive chef, Eglis Siu, traveled from coast-to-coast in search of the country’s best oysters, and are proud to be featuring Nonesuch Oysters from Maine and Hama Hama Oysters from the Pacific Northwest on the menu, among others.

In the midst of gearing up for the anticipated opening of Redfish, Chef Adrianne and her team have also been busy transitioning her original namesake restaurant, Chef Adrianne’s Vineyard Restaurant & Bar, into an all-new 8,000-square-foot indoor and outdoor space. Opening its doors August 10, the award-winning restaurant whom celebrated its 13thanniversary this year,  will offer Chef Adrianne’s well-known dishes including the 5 Diamond Center Cut Filet, French Onion Soup  on Tuesdays and the legendary Cowgirl  Bone-In Ribeye  on Thursdays. There will also be new additions to the menu such as a burrata bar and charbroiled oysters, an enhanced craft cocktail and sangria program to complement the restaurant’s 45-foot-long bar.

The new Chef Adrianne’s will seat 82 outside on the patio, and approximately 270 between the indoor and outdoor areas, once permitted. Chef Adrianne’s beloved Dark Dining events will resume at the new location with an enhanced audiovisual experience.

In addition to Chef Adrianne’s Vineyard Restaurant & Wine Bar and Redfish by Chef Adrianne, she is also the creator of the fine-casual concept, Cracked by Chef Adrianne, which started as a food truck at The Wharf Miami and since expanded to a free-standing location in Coral Gables last year.
