Caretta Caretta, Singer Island’s new and only beachfront restaurant, is now open at The Singer Oceanfront Resort, Curio Collection by Hilton, located on a pristine, four-mile stretch of this hidden enclave just outside of Palm Beach. Its name an homage to the Loggerhead sea turtle commonly found throughout Florida’s marine environment, Caretta Caretta takes inspiration from the coast and welcomes guests as a playful oceanfront concept designed to evoke a joyful, carefree dining experience.

Upon entering Caretta Caretta off the resort lobby and reception area, guests encounter a seamless, indoor/outdoor space designed to enhance the restaurant’s connection to its prized seaside location. Outfitted with classically chic, coastal touches, the dining room features warm wood floors; woven rattan furnishings and light fixtures; elegant striped fabrics; and bright tilework. Envisioned to create a true sense of escape, Caretta Caretta offers diners a place to linger and socialize against an inviting backdrop of the turquoise Atlantic.

TASTE OF THE SEA

Helmed by Chef Glenn Rogers, Caretta Caretta features a menu of refined coastal fare sourced directly from local waters and spotlights seasonal ingredients with approachable preparations. Diners will find small plates and shareables in addition to larger, entrée style portions, allowing flexibility to enjoy everything from a quick bite at happy hour to a full, multi-course dinner. Culinary highlights on the menu include Crispy Whole Snapper with stewed peppers, tomatoes, onions, cilantro rice; “Our”Shrimp & Grits with parmesan polenta, sauteed spinach, blistered cherry tomatoes, Florida citrus butter; Wild Mushroom and Truffle Pappardelle with exotic mushroom mix, gremolata, truffle parmesan cream; and Grilled Skirt Steak paired with yuca fries, aji aioli, onion & tomato demi glaze.

Morning breakfast service at Caretta Caretta offers a versatile selection of dishes, whether diners are seeking a light bite prior to heading out to the beach or sitting down for a hearty start to the day. From house granola with yogurt and overnight oats to a loaded smoked salmon bagel and signature crab benedict, there is something to suit every palate.

Chef Rogers brings more than two decades of experience in the restaurant industry to his role as executive chef of Caretta Caretta. Originally from Massachusetts, Rogers made his way south to Florida in 2012 and has since worked alongside some of the region’s most celebrated chefs, including Chef Clay Conley of Buccan and Chef Pushkar Marathe of Stage. At Caretta Caretta, he aims to bring seafood to the forefront through playful appetizers and approachable, elevated entrées for the ultimate waterfront dining experience.

“Caretta Caretta is the perfect addition to Singer Island’s culinary offerings,” Rogers says. “There’s nothing like it, and I’m excited to incorporate creative preparations with bold, flavor forward dishes that really spotlight the area’s wealth of seafood.”

TROPICAL TIPPLES

Complementing the food offerings, Caretta Caretta’s beverage menu features a thoughtful list of wines by the glass, draft and canned/bottled beers, and several original and signature cocktails. Standout sips include The Loggerhead with Knob Creek rye, Giffard Caribbean Pineapple, Green Chartreuse, lemon, and lime; 1944 Mai Tai with Diplomático Reserva Exlcusiva Rum, Pierre Ferrand Dry Curaçao, Giffard Orgeat, and lime; and the Endless Summer with Mi Campo Blanco Tequila, Cointreau, salted watermelon purée, and lime. Whether imbibing at the indoor/outdoor bar, poolside, or in the dining room, Caretta Caretta’s beverage program transports guests to a vacation state of mind.

A TRUE CULINARY DESTINATION

Offering guests the ultimate opportunity to relax and unwind, Caretta Caretta will provide poolside service to the pool deck, private cabanas, and outdoor lounge area. Guests can expect an array of shareables like chilled jumbo shrimp and smoked fish dip; handhelds, including a crispy shrimp wrap and Cubano melt; tropical cocktails; a rotating selection of frozen drinks; and other ice-cold beverages.

Alongside Caretta Caretta, visitors to the resort can also enjoy Top Shell, Singer Island’s only beachfront bar featuring sweeping ocean views with a distinct food and beverage menu; and The Market at Singer, a casual grab-and-go retail concept serving La Colombe coffee, prepared breakfast and lunch items, and pre-stocked picnic baskets and coolers for the beach.

Guests interested in private dining can be accommodated on the resort’s Atlantic Deck, located oceanside between beachfront bar Top Shell and The Singer’s outdoor events pavilion. With capacity for parties up to 140, the Atlantic Deck offers full private service from Caretta Caretta and guests have the option to curate a custom menu, if desired.

Caretta Caretta is open daily from 7 a.m. to 10 p.m., offering breakfast, lunch, and dinner for both resort guests and local visitors and residents of the Palm Beach area.
