Consolidated Restaurant Operations, Inc. announced plans to open a Cantina Laredo restaurant in The District at Eastover in Jackson, Mississippi, in summer 2017.
Cantina Laredo, featuring modern Mexican cuisine, will serve authentic Mexican dishes and drinks using only the best ingredients. From the signature Casa’Rita made with fresh squeezed limes, to “Top Shelf” guacamole, prepared tableside, fresh fish paired with distinctive salsas and sizzling Mexican Apple Pie served on a hot skillet smothered with brandy butter, there will be something on the menu to satisfy everyone.
The Jackson Cantina Laredo is a joint venture partnership between Dallas-based CRO and a local Jackson investment group led by Breck Hines and Ted Duckworth. Cantina Laredo has 39 locations throughout the US and has restaurants in London and Abu Dhabi, UAE. Jackson will be the first Cantina Laredo location in Mississippi.
“We are excited to expand our Cantina Laredo brand in Jackson,” CRO Chief Executive Officer John D. Harkey, Jr. says about the development. “We continue to pursue locations where our modern Mexican restaurant enhances the modern life of a city. The District at Eastover is an extraordinary fit.”
“Cantina Laredo is a perfect complement for the dining and entertainment experience we are planning at the District at Eastover,” says Ted Duckworth. “The revitalization of the historic Eastover and Fondren neighborhoods showcases the need for exceptional dining opportunities, and the fresh interpretation of modern Mexican cuisine offered by Cantina Laredo will be a welcome addition to this exciting array of restaurant and retail partners.”
Cantina Laredo Jackson will have a prime location in the District at Eastover. The 6,376 square foot restaurant will also offer a 1,406 square foot patio for combined seating over 250.
