Bottleneck Management, the Chicago-based restaurant group specializing in dynamic craft beer, draft wine, crafted cocktails, and contemporary American cuisine, announces the forthcoming opening of its first Minnesota location of the Old Town Pour House restaurant concept, slated to open in spring 2016. Located in Minneapolis’ Mayo Clinic Square, the city’s most innovative redevelopment project, the restaurant showcases a renowned craft beer program of 90-plus local and global brews with an equally matched menu crafted by corporate executive chef Paul Katz. This property marks the fourth location of the concept.

“We’re extremely proud of the strong, loyal customer base we’ve built with our Bottleneck properties,” says Bottleneck Management CEO Chris Bisaillon. “After our success in Chicago, we saw an opportunity to expand the Old Town Pour House brand to other markets, first with a location in Gaithersburg, Maryland, and now Minneapolis. Our team is looking forward to sharing our distinct brand of hospitality with visitors to the up-and-coming Mayo Clinic Square.”

Bottleneck Management views beer as a staple of life, and guests to the new concept can enjoy an unparalleled bar program. The restaurant showcases favorite local brews, along with a large variety of rotating regional, national, and global beers sourced from small producers. The food menu reinvents American fare with a signature approach to the classics, featuring fresh, original flavors created by corporate executive chef Paul Katz. Menu categories include: bar bites, shareables, sandwiches and burgers, soups and salads, entrées, and desserts. Additionally, each Old Town Pour House property showcases an extensive A/V system, with multiple 110-inch HDTVs.

The Mayo Clinic Square has been completely transformed internally and externally, showcasing a modern design. Minneapolis-based RSP Architects renovated the structure, which was previously windowless and sterile. The interior boasts clear visual pathways linking Hennepin and First Avenue, providing tenants and guests convenient, safe access. Materials—such as glass, stone, metal panel, and scrim—bring a cohesive composition to the exterior façade. Through the bold use of exterior LED feature lighting, the building comes alive at night symbolizing its presence as a business, entertainment, sports, and cultural centerpiece. In addition to Bottleneck Management’s restaurant, other tenants include: Mayo Clinic Sports Medicine and Minnesota Timberwolves and Lynx teams.

The Minneapolis property is the fourth installation of the Old Town Pour House brand, totaling nine locations for the group as a whole. Bottleneck Management has plans to extend its brand to additional major markets in the near future.
