First Watch is expanding its breakfast, brunch, and lunch concept in Colorado, with plans to bring stores to Denver and Colorado Springs later this year as part of a multi-unit development agreement with Fresh Start Colorado, LLC.

The development plan calls for eight restaurants in five years. The first Colorado unit is expected to open later this year in Denver.

Fresh Start Colorado, LLC is made up of Rich Boyle, a multi-unit restaurant developer with more than 30 years of experience, and prominent local real estate developer Bill Schuck.

“We are very excited to bring such an exceptional brand like First Watch to Colorado,” says Boyle, who will serve as the managing partner.

“We feel that Denver foodies and families alike will enjoy the unique menu offerings and fresh approach to breakfast, brunch, and lunch,” says Schuck, president of the Schuck Corporation.
