Breakfast Nachos

This twist on nachos by Chef-mate is perfect for brunch and all-day breakfast menus.

Combining the indulgent flavors of nachos with breakfast gravy makes a dish that capitalizes on both the global food and all-day breakfast trends.


30 ounces prepared tortilla chips

2 1/2 quarts scrambled eggs

1 1/4 quarts cooked black beans, warmed

1 1/4 quarts Chef-mate Country Sausage Gravy, warmed

2 1/4 quart Cheddar cheese

10 tbsp chili pepper, Jalapeño sliced

2 1/2 cups cherry tomatoes, quartered

2 1/2 cups raw onions, small diced

10 tsp scallions, sliced

2 1/2 avocados, sliced


1. Pre-heat oven to 350 degrees

2. Place tortilla chips in an oven-safe platter or skillet. Top with scrambled eggs, Chef-mate Country Sausage Gravy, shredded Cheddar, and warmed black beans

3. Place in pre-heated oven to warm and melt Cheddar cheese

4. Remove from oven when done and top with scallions, jalapeños, tomatoes, onions, and avocados.

Suggestion: Drizzle with different variations of crema for an extra twist
