Sushi | Bar Hospitality announced the expansion of its celebrated Sushi | Bar Austin location with completed renovations quietly unveiled at the beginning of April. Once operated out of the private dining room of the 2600 E. Cesar Chavez St. location, Sushi | Bar Austin will now take complete residence of the East Austin building space. The expansion provides increased seating by opening a second 10 seat intimate omakase room to complement their existing room. This additional room will have three seatings per night, allowing an additional 30 guests per evening to enjoy the coveted experience. As well, guests will notice a renovated waiting area, remodeled restrooms, and a new bar where guests can enjoy their complimentary welcome cocktail.
The expansion is a response to the increased demand, and a desire to keep guests’ needs a top priority while the popularity of the omakase-style concept continues to grow since its opening just over two years ago.
“When we learned that Bento Picnic was going to be closing, we took the opportunity to negotiate the added space for Sushi | Bar Austin,” says Ryan Stock, Co-Founder of Adept Hospitality, partner Sushi | Bar Hospitality. “The expansion was just enough to keep the intimacy of what Sushi | Bar is most celebrated for, while still being able to keep the experience exclusive.”
Sushi | Bar was founded in 2019 and opened in Los Angeles and Montecito, California (2019). In 2020, Adept Hospitality, a partnership between Ryan Stock, Josh Tohl, and Jonathan Husby, with a collective 55+ years in the hospitality and development business, joined forces with partner Steve Michaels of Asylum Entertainment Group, to expand the Sushi | Bar concept into Austin. In December 2021, a decision between Michaels and Adept Hospitality – Sushi | Bar Hospitality’s partners – was made to amicably part with the group’s then chef, a minority shareholder. Chef Ambrely Ouimette, who manned the restaurant in a full time role as head Chef from the first month in Austin, was later promoted by the Sushi | Bar team as Executive Chef. Her vision has contributed to expanding the brand, which has included the launch of Miami Beach, named one of Miami’s hottest new restaurants upon opening in the Esmé Miami Beach Hotel, Florida in 2022, and the subsequent announcement of locations in Chicago (summer 2023) and Dallas (late summer 2023).
Sushi | Bar Austin is located at 2600 E. Cesar Chavez St., Austin, TX 78702. Reservations are available via Tock or by calling (737) 931-7584. The restaurant is open Monday through Sunday and offers three seatings per night at 5:00 p.m., 7:30 p.m. and 9:45 p.m. Each omakase experience is $159 per person with the option to upgrade to a premium experience to include sake pairings.
