Eggs Up Grill, a rapidly growing breakfast, brunch and lunch concept, is moving into the state of Mississippi in 2023. Former Captain D’s Area Manager Richard Harris, along with his partners Bill and Larry Johnson, inked a deal for one location in Meridian, Miss. with a target opening date of this summer. Eggs Up Grill signed record development commitments last year, with more than 60 new locations, including its largest ever development agreement for 30 restaurants in Dallas-Fort Worth, Texas and its second largest agreement for 10 restaurants in Nashville, Tenn., bringing a region-wide presence of 150 Eggs Up Grills open, under development or committed to open by local franchise partners.

Captain D’s for 40 years, beginning as a cook, and working his way up to an area supervisor of 12 locations in Atlanta, Ga. Most recently, he was the hometown area partner for a Captain D’s franchise in Meridian, Miss. He met his partners, the Johnson brothers, when they were customers at his restaurant; the two have been business owners in Meridian for the last 60 years, including real estate and car dealerships. Richard spent 18 months researching Eggs Up Grill, watching its growth closely, before making a trip to Madison, Ala. to dine at one of the restaurants.

“I knew they had doubled in size, and I knew that I was intrigued by the décor and the concept, but when I finally dined at an Eggs Up Grill, I was hooked,” said Harris. “It’s exactly what I expected – I felt like I was eating breakfast on vacation with the colors and the openness, not to mention – after 40 years in the business as an operator– eliminating the night shift was very attractive to me,” says Harris.

With locations across the Carolinas, Georgia, Florida, Virginia, Tennessee, Alabama, and soon entering Texas and Mississippi, Eggs Up Grill offers seasonal items and its full menu for dine-in or order online for takeout or delivery. Menu categories include omelets and benedicts prepared with fresh, hand-cracked eggs, pancakes, waffles and breakfast sandwiches and a selection of mimosas. Lunch choices include juicy burgers, tasty sandwiches, melts, salads and bowls. The menu also offers gluten-friendly options and a kids’ menu. The full menu is available open to close. All locations are individually owned and operated by a local member of the community.
