This Easter, Four Seasons Resort and Residences Anguilla will welcome acclaimed chef and restaurateur Marcus Samuelsson to its signature blufftop restaurant, SALT, for a memorable culinary experience available to guests and locals alike between April 14 and 18, 2022.

Created in partnership with Four Seasons Resort Anguilla Executive Chef Emmanuel Calderon, the carefully crafted menu will focus heavily on seafood, with greens and products playing a strong supporting role. Drawing from Marcus’ Ethiopian and Swedish roots when it comes to ingredients, guests will be treated to a contemporary spin on traditional home-cooked dishes and recipes, with clean, fresh and comforting flavours such as pigeon peas, jerk spices, dumplings and the seafood staples of Caribbean cuisine.

Highlights from the limited edition, a la carte menu will include Crispy Crabby Salad with dill, roasted peanut salsa, green papaya, roti to start; Lobster Bird combing lobster dashi broth, green beans sweet potato dumpling and corn puree; and a sharable Grand Jollof with grilled lobster, tomahawk, sides for mains; and desserts including Salt Baked Pear with rum ice cream, whipped mascarpone.

“I am so excited to be doing my first residency in Anguilla with Four Seasons Resort and Residences Anguilla and I could not think of a better partner to help me kick off this adventure,” comments Chef Marcus Samuelsson. “I have so much respect and appreciation for Caribbean cuisine and welcome this opportunity to create and contribute to this beautiful culinary community and culture.”

During his time at SALT, Marcus will engage in local community initiatives including a visit to the Anguilla Community College (ACC) to inspire young talent on the island as well as partnering with the College to invite interns to participate throughout the activation.

This latest collaboration adds to the Resort’s thriving partnerships program, most recently welcoming beauty brands deMamiel and 111SKIN, fitness legends including former Olympian Louise Hazel and 2-Time Golden Gloves Boxing Champion Ngo Okafor, as well as fellow native Anguillian Chef Kerth Gumbs, acclaimed mixologist Valentino Longo, and even a special performance from Ahmir “Questlove” Thompson – 5-time GRAMMY Award-winning musician.
