Chef Joseph McFadden, the award-winning Executive Chef at Euphoria Fish House at Margaritaville Resort Orlando is taking his culinary expertise to Spain to compete the 5th annual World Tapas Competition by the City Valladolid, representing the United States during the World Tapas Festival, November 6-14. McFadden is one of fifteen chefs chosen to compete in the competition out of over 50 chefs from across the globe. The winner will be chosen by the network of Cook Associations WACS (World Association of Chefs Societies), accredited gastronomic chroniclers from the five continents.

Chef McFadden will be competing with a signature dish of his own creation, an innovative duck tapa three-ways consisting of a crispy duck skin cone filled with duck liver and cognac parfait, smoked duck breast, peking sauce and garnished with cucumber and white scallion.

“The idea for the tapa is born from my love of cooking with duck, its versatility and showing three different ways it can be used to complement itself and how the different textures blend seamlessly,” says Chef McFadden.

Visitors of Euphoria Fish House at Margaritaville Resort Orlando will have a chance to taste this modern take on tapas as it will appear as a restaurant special when Chef McFadden returns from the competition.
