Willa’s Provisions – the casual all-day café from the team behind Willa’s – will open Thursday, April 15 at 310 North Rome Avenue in North Hyde Park. Housed in the front of Willa’s, the new family-friendly neighborhood restaurant and bar from Tampa natives Nate Siegel and Merrin Jenkins that opened last month, Willa’s Provisions will serve a menu of pickup fare and offer retail, including a curated selection of pantry staples, home goods and Willa’s merchandise. Hours of operation upon opening will be 8am to 5pm Wednesday through Sunday with plans to be open daily in the future.

For their coffee program, the café has partnered with King State Coffee – the Tampa-based roastery and microbrewery from former musicians Nate Young and Tim McTague – and will serve the acclaimed coffee brand’s “Yuh” blend for espresso, cold brew and drip. The beverage program will also include organic tea from HOUSE of WARIS Botanicals and matcha from Matchaful.

“We met Nate and Merrin what feels like years ago – Nate gave us a tour of an old building with a lot of character and an even bigger vision. It felt a lot like King State when we started,” says King State founder Tim McTague. “Nate from the get-go seemed to understand quality, experience and most importantly customer service, so when they asked us to partner with them at Willa’s Provisions, it was a no-brainer. Provisions turned out even better than we thought it could have, and to have a mini-King State in a neighborhood that we don’t serve is awesome – especially one that’s run by a rad team that cares about our coffee as much as we do.”

Retail offerings will include a curated selection of Merrin and Nate’s favorite pantry staples, including Pineapple Collaborative’s extra virgin olive oil and apple cider vinegar, natural and biodynamic wine and Willa’s housemade items including lemon vinaigrette dressing, pickles and coconut almond granola. There will be a rotating selection of Willa’s merchandise, from hats and sweatshirts to coffee tumblers and espresso cups.

“We wanted to create a coffee shop where when you visit – no matter the reason or the time of day – you can experience something unique and special, whether that be enjoying a cappuccino and a freshly baked glazed cruller or learning about natural wine for the first time. Coming to Willa’s Provisions should be a highlight of your day, where there’s always something new to taste and discover,” says Willa’s Provisions co-founder Merrin Jenkins.

Amid the COVID-19 pandemic, Willa’s Provisions is implementing safety measures including wellness checks for all employees before every shift, air filtration, surface disinfecting, mandatory masks for all staff and guests unless seated and more.

Willa’s and Willa’s Provisions are housed in a 4,700-square-foot industrial building initially constructed nearly a century ago. Its urban setting is three blocks from South Tampa, bordering the heart of downtown Tampa and Tampa Heights, and a short walk from the University of Tampa and the growing Cypress Corridor. Willa’s Provisions will serve as the private dining and event space for the restaurant, with plans to host pop-ups in the future.

Twice James Beard Foundation nominees, Austin’s FÖDA Studio leads interiors, identity and brand development. RDB Design serves as Architect of Record. The design team carefully preserved the gritty qualities of the aging structure while introducing crisp, clean-lined and reductive new finishes to create precise contrast. The combined restaurant and café features time-tested elements from classic cafés and brasseries, but at its heart, is fundamentally Floridian and meant to serve its neighborhood with comfort. The design team focused on forms and materials native to a humid coastal setting, presented without kitsch.

Co-founder Nate Siegel brings an extensive hospitality background with nearly a decade of experience working at renowned Tampa and New York restaurants, including Mise en Place, Ruschmeyer’s, Tacombi and with the Keith McNally Restaurant Group, which includes Balthazar, Pastis, Minetta Tavern, Morandi and more. A fellow Tampa native, Co-founder Merrin Jenkins comes from a long line of entrepreneurs. She has worked for several non-profits including the Tampa Museum of Art and New York University, and most recently, she served as the Director of Development for the Akilah Institute, an award-winning women’s college in Rwanda educating female leaders for a sustainable future. Both Nate and Merrin are realizing a long-held dream of opening a restaurant and café in their hometown.
