Bryan Simpson was named Chef de Cuisine at Madera, a Michelin-starred restaurant located at the luxury five-star Rosewood Sand Hill hotel in Menlo Park, California. In this role, Simpson is tasked with developing menu items, designing recipes and working alongside Executive Chef Reylon Agustin to ensure the food & beverage operations continue to excel at the award-winning property.

With more than 10 years of experience in the culinary industry, Simpson will apply his vast knowledge, minimalist approach and passion for sustainability to his new position at Madera. Most recently, Simpson served as Sous Chef at Momofuku in Las Vegas, Nevada, where he oversaw food preparation, line cooking and dish plating under renowned chef, David Chang. In this role, Simpson developed his expertise in interpreting ingredients in different cooking mediums and overseeing large-scale operations. Prior to working at Momofuku, Simpson served various chef positions at some of the most prestigious restaurants including The Ritz-Carlton, Lake Tahoe, California, Wolfgang Puck’s Spago in Las Vegas, Michael Mina’s Strip Steak in Las Vegas, Mondrian Hotel in South Beach, and multiple dining establishments at the Cosmopolitan in Las Vegas. Simpson graduated from Le Cordon Bleu Institute of Culinary Arts in Pittsburgh, Pennsylvania, where he studied Culinary Arts.
