Beginning September 4, 8ARM’s Japanese-style kanzume bar, INK, will evolve into an eclectic natural wine bar, offering organic, biodynamic wines from boutique producers with limited distribution.

General manager and beverage director Joshua Fryer will oversee the wine list to feature diverse and dynamic by-the-glass offerings that will change regularly. Both 8ARM and 8ARM WINE will offer a unified bottle list, but guests will have more by-the-glass options at the wine bar. 8ARM’s beloved list of fortified wines will be available to order as a flight or by-the-glass. Fryer will also continue to offer gong fu tea service, an intimate and personalized tea ceremony, at 8ARM WINE with tea selections sourced from China, Japan, Taiwan and India.

Curated tinned seafood and conservas will remain on the food menu, with the addition of a few plated dishes from 8ARM’s kitchen, such as cheese plates, pâtés and desserts. Fryer looks forward to introducing daily beverage specials and features, in addition to winemaker meetings, industry tastings and more within the space:

  • Tuesdays: Specially-Priced Rosé and Orange Wines and Late-Nite Wine Trivia
  • Wednesdays: Specially-Priced Wines from Female Winemakers
  • Thursdays: Specially-Priced Sherry
  • Fridays: Vertical or Horizontal Flights
  • Saturdays: Magnum Special

Guests will also be able to enter 8ARM WINE from the parking lot, in addition to the dining room. INK’s last service will be Saturday, August 31, before the debut of 8ARM WINE the following Wednesday.
