The Graham Georgetown (1075 Thomas Jefferson Street NW) announced that John Waldy will head the property’s kitchens as executive chef. A veteran of the hospitality industry, Waldy brings nearly 20 years of experience working for outstanding brands including The Ritz-Carlton and Renaissance. In his new post, Chef Waldy will oversee in-room dining, the daily menu at The Alex Speakeasy, and will introduce Rooftop EATS today, August 12, a full-service restaurant atop The Graham Georgetown with sweeping 360-degree views of the city skyline and Potomac River.

At Rooftop EATS, guests will enjoy full meals every day of the week on The Graham’s stunning rooftop. New weekday lunch options include a rich and flavorful avocado crab toast, a pork belly bowl, and a delicate edamame hummus served with house made pita. Those who enjoy small bites for dinner can choose from a simple, delicious whipped ricotta flatbread, a savory chicken empanada stuffed with fresh roasted meat and seasonal vegetables, or a classic half smoke from Georgetown’s legendary delicatessen Stachowski’s.

Rooftop EATS will open starting August 12, weather permitting, for lunch Monday through Thursday from 11:30am to 2:30pm and for dinner from 5pm to 10pm. On Saturdays and Sundays, guests can enjoy lunch from 12pm to 3pm with dinner starting at 5pm. Happy hour specials will be offered Monday to Friday from 5pm to 7pm.
