Set along the docks of picturesque Stonington, Maine, Acadia House Provisions, from two Michelin-starred Chef Ryan McCaskey, opens Saturday, June 28. The sister restaurant of Chicago’s award winning, Acadia, offers the celebrated chef and Deer Isle summer resident’s takes on coastal Maine fare. The approachable menu showcases a strong commitment to local farms, fishermen, and purveyors within a 40-mile radius.

“Acadia House Provisions has been in the making for many years,” Chef McCaskey says. “Having a companion restaurant to Chicago’s Acadia has allowed me to focus on simpler preparations of food that showcase the abundance and beauty of the state of Maine, my long-standing inspiration.”

The menu is comprised of celebrated dishes from Chef McCaskey’s fine dining restaurant as well as elevated takes on the classic fare of the area. Calling upon the farmers and purveyors in Penobscot Bay, highlighted items include the Smoked Cobia with chorizo aioli, jalapeno, apple, cilantro and squid ink vinaigrette as well as the Lobster Grilled Cheese showcasing fresh lobster pulled from the same waters the restaurant prepared with maître d’ butter, white cheddar, pain de mie, and tomato shallot jam. Other menu stand-outs include the Short Rib with Chef Ryan’s riff on “peas and carrots” with barolo jus as well as a Nova Scotia Day Boat Halibut accompanied by summer succotash, rock shrimp, bacon, corn, and shiitakes.

Frequent collaborators, cocktail guru Michael Simon and Maine’s first Master Sommelier Scott Tyree, developed drink and wine programs to complement Chef McCaskey’s coastal cuisine. Beginning with dinner services on Saturday, June 29 and Sunday, June 30 with lunch to be added the next week, the seasonally recurring restaurant features a summer cottage-inspired, intimate dining room and 72 seat patio set along the water.
