The Adolphus welcomes new general manager Victor Rojas to The French Room. Located within the storied walls of Dallas’ first luxury hotel, The French Room remains one of the most revered names in Texas fine dining. Now, after a thoughtful and meticulous two-year restoration, the inimitable dining room has been thoughtfully restored, with Rojas at the helm of service.

In his new role, Rojas will work alongside The French Room’s executive chef, Michael Elhert, and property food and beverage general manager, Anthony Cournia, to lead the acclaimed dining destination and maintain the property as one of the most distinguished culinary destinations in the country.

Rojas brings over 25 years of fine dining and hospitality service experience to The French Room, having previously worked alongside seasoned, highly-regarded chefs exclusively in the Dallas-Fort Worth metroplex, including Stephan Pyles and, most recently, Bruno Davaillon. Rojas has a longstanding record of earning numerous accolades for each restaurant under his stewardship.
