Lubbock-based Abuelo’s Mexican Restaurants, famous for its hand-crafted Mexican cuisine, today announced several new menu items that are available for a limited time. Abuelo’s is celebrating the flavors of fall with four new entrées and a spicy new margarita flavor, each showcasing the distinctive flavors of Mexico.

Abuelo’s new Verde Margarita—crafted with fresh citrus, Cuervo Tradicional Silver Tequila, and Ancho Reyes Verde Liqueur topped with an Anaheim pepper slice—adds spice to the cocktail menu.

The Colorado, one of Abuelo’s limited-time entrée items, features fire-grilled carne asada atop grilled peppers and onions, accompanied by two cheese enchiladas. The Ranchera pairs flavorful grilled chicken breast strips with grilled peppers and onions, served with a spinach enchilada and ranchera sauce as well as an avocado enchilada with cream sauce.

The Puebla is another limited-time entrée; it features lightly fried chicken breast medallions stuffed with a spicy blend of chorizo, Poblano peppers and cheese and is served with a beef tamale and carne sauce. The Hidalgo is a delicious chile relleno stuffed with fajita steak and topped with chile con queso, accompanied by a chicken fajita enchilada. All new entrées are served with refried beans and a choice of Mexican rice or Papas con Chile (creamy blend of whipped red potatoes, red and green peppers, four cheeses and sour cream), and each is priced under $14.

“Our new fall favorites make this a perfect time for guests to kick off autumn at Abuelo’s,” says Robert Lin, president of Food Concepts International, Abuelo’s parent company. “As the days get shorter and the holidays approach, guests can treat themselves to our fresh takes on authentic Mexican cuisine and try our new menu items while there’s still time.”
