Lettuce Entertain You Enterprises announce Booth One (1301 N. State Parkway), a classic Chicago restaurant being re-introduced in the heart of the Gold Coast neighborhood from founder Rich Melman. Drawing inspiration from the legendary restaurant at the former Ambassador East Hotel, Booth One will be a modern American restaurant with a vibrant all day dining scene.

The iconic restaurant featured one of the most famous booths in restaurant history, with the original Booth One being synonymous with celebrity and iconic dignitaries. In its heyday, it was the most sought after booth in the country; a regular spot you could find legends and luminaries like Frank Sinatra, Judy Garland, Sammy Davis Jr., Bette Davis, Bill Murray, Phil Collins, Oprah, Eddie Murphy, John Belushi, Mick Jagger and many, many more.

“When you come to Booth One, our goal is that everyone will be treated as a celebrity,” says Rich Melman.

With Melman’s return to the space, guests can expect a dining experience at the new Booth One that celebrates fun, social dining with modern interpretations of classical dishes and ever-changing daily specials. 

Booth One will be open for breakfast, lunch and dinner, making an all day affair for hotel guests, our Gold Coast neighbors and all of Chicago. Booth One is located in the Ambassador Hotel (1301 N. State Parkway) and will be open Monday–Thursday from 6 a.m. to 11 p.m., Friday 6 to 1 a.m., Saturday 7 to 2 a.m. and Sunday 7 a.m. to 11 p.m.
