True Food Kitchen, famed restaurant brand from Fox Restaurant Concepts founder Sam Fox and integrative medicine expert and author Dr. Andrew Weil, is set to open June 14 in Bethesda, Maryland. The health-driven restaurant destination, located at Solaire Bethesda, 7100 Wisconsin Ave., will make its Maryland debut with its signature summer menu featuring seasonally inspired dishes and cocktails.

Inspired by the principles of Dr. Andrew Weil’s anti-inflammatory diet, True Food Kitchen merges nutrient-rich ingredients with a flavor-forward menu that rotates regularly to let guests experience great-tasting ingredients at the peak of their freshness and flavor. Signature dishes on the new summer menu will include the Heirloom Tomato Pizza with grilled artichoke, roasted garlic, vegan almond ricotta and black truffles, Pan Roasted Chicken with corn, green garbanzo, Fresno chili, feta, cilantro and, a pumpkin seed pesto in addition to flavorful and healthful bowls, sandwiches and antioxidant-packed desserts.  Behind the scratch bar are fresh-pressed fruit and vegetable juices, seasonal cocktails, wine and a selection of local beers. New to the summer menu is the Watermelon Mojito, made with rum, watermelon, mint, pineapple and lime.

True Food’s open kitchen concept is designed to bring guests closer to the team’s culinary craft. Open daily for lunch, dinner and weekend brunch and dinner, the full-service restaurant caters to nearly every food preference with a variety of gluten-free, naturally organic, vegetarian and vegan offerings.

Complementing the restaurant’s natural elements and honoring True Food’s commitment to the arts is a vibrant locally-inspired mural from Washington D.C.-based artist Juan Pineda, who was selected by True Food Kitchen to produce a painted piece that is reflective of the Bethesda community and its active and healthy lifestyle. The mural, which will encompass an entire wall of the restaurant, showcases Pineda’s bold and distinct style and features elements that give a nod to the neighborhood as well as the restaurant’s brand values.
