The Adolphus, the storied downtown hotel synonymous with timeless Dallas style, is pleased to announce that Chef Michael Ehlert is helming a vibrant and fresh return for The French Room to its original roots. Slated for opening in 2017, The French Room unveils Chef Ehlert’s interpretation of classic French cookery, seamlessly blending the technique and discipline of fine French cuisine with the warmth and approachability of modern and elevated dining experiences. The winner of numerous awards and accolades, The French Room is the only restaurant in Texas to receive the coveted AAA Five Diamond award for 25 consecutive years.

In addition to The French Room, Chef Ehlert is overseeing the food and beverage offerings at a brand-new concept, The French Room Bar and Salon. The Salon is a chic, lounge-worthy space that welcomes guests just outside of The French Room and features curated artwork from prominent Texas artists. The Bar, adjacent to The French Room, is an effortlessly cool and stylish cocktail venue offering a thoughtful beverage program and shareable plates. Both provide a preeminent destination for socializing and imbibing in the downtown Dallas scene.

A graduate of The Culinary Institute of America, Chef Ehlert previously served as Executive Sous Chef of DBGB Kitchen & Bar in New York City before relocating to Dallas and going on to earn four stars as Executive Chef of the Front Room Tavern at Hotel Lumen and as Chef de Cuisine of Hibiscus.

Utilizing his experience and background Chef Ehlert will also incorporate his studious attention to detail and proclivity for incorporating innovative techniques to the classics. Locally sourced provisions and produce will receive his lively French interpretations, both thoughtful and whimsical, served in the dramatic backdrop of the restored interiors of The French Room.

Designed by Dallas interiors and branding firm, SWOON The Studio, The French Room returns to its grace and refinement harkening back to its origins as the preeminent destination for culture and fine dining. Last refurbished in the 1980s, the renovation features meticulously applied candlelight-white Venetian plaster walls reminiscent of Parisian landmarks complementing gilded Louis XVI-style chairs, and the twin Italian Murano Glass chandeliers restored to their original sparkle. The immersive space features Chef Ehlert’s menu that draws upon French culinary traditions and methodology with a fresh sensibility, including thoughtful table-side flourishes and a comprehensive wine program.

The Adolphus continues to bring timeless culture to the Dallas area as it has done for the past 100 years.
