This dish makes a perfect addition to breakfast, lunch, and dessert menus according to Chef Fabio Viviani.
Ingredients
3 cups all-purpose flour
1⁄3cup sugar, plus 1½ tbsp
1 tsp salt
½ tsp baking powder
½ tsp baking soda
1 stick cold butter, cut into large cubes
1½ cups buttermilk
1 cup coarsely grated Grana Padano
½ tsp black pepper
1 cup sliced strawberries
1 tbsp Gran Marnier
¼ tsp orange zest
1 cup heavy cream whipped to soft peaks
Directions
1. Pre-heat oven to 400 F. In medium bowl, combine flour, 1⁄3 cup sugar, salt, baking powder, and baking soda. Add butter, incorporating it into dry ingredients with a pastry blender until mixture is the size of peas. Add buttermilk and half of the cheese. Stir until just combined.
2. On lightly floured surface, roll out dough into 1-inch thick circle. With a biscuit cutter, cut 2½-inch rounds. Place rounds 1 inch apart on parchment-lined baking sheet. Bake 5 minutes. Remove from oven and sprinkle with remaining ½ cup cheese and pepper. Bake 7–10 minutes, or until golden brown.
3. In medium bowl, combine strawberries, Grand Marnier, orange zest, and remaining 1½ tablespoons sugar. Serve biscuits with berries and cream.
Creates 10-12 servings.
