Chef Kerry Simon’s Simon Mansion and Supper Club at Hard Rock Hotel & Casino Punta Cana, the AAA Four Diamond awarded Caribbean resort and the first all-inclusive Hard Rock Hotel in the world, debuts August 17. Currently soft open, Simon Mansion and Supper Club presents an eclectic yet composed menu featuring extensive fresh sushi offerings, a variety of innovative appetizers, delectable entrées, dry-aged meats. and local seafood.

Open for dinner, signature dishes from Simon Mansion and Supper Club’s include the Toriniku Roll featuring fried chicken, covered in spicy chicken and “gary honey” sauce; Grilled Corn Bisque with popcorn, scotch bonnet oil and corn; Tuna Carpaccio with grapes and candied-spice macadamias; Grill Roasted Rack of Lamb with a basil crust, white bean ragoût and sherry essence. In addition to these seasonal dishes, chef Simon will also serve his signature dishes developed over years of owning restaurants throughout the United States, including the Mansion Kobe Burger with aged white cheddar, onion marmalade, lettuce, and tomato; and the “Junk Food Platter” featuring vanilla milkshake, cotton candy, caramel corn, chocolate cream ding dong, and salted chocolate chip cookies, for dessert.

Highlights from cocktail menu include fresh takes on classic rum-focused favorites including the Mojito Moorea with rum, hint of vanilla, fresh mint, and soda; and Mai Tai featuring aged rum, simple syrup, lime juice, almond syrup, cherry, lime, mint, and pineapple.

Renowned interior design firm 555 International, headed by James Geier, designed the restaurant to mirror the home of a rock ‘n’ roll icon. Featuring multiple rooms—three of which serve as private dining rooms—reflect the dining room, living room, bedroom, bathroom, library, studio, and patio, Simon Mansion and Supper Club offers a peek behind the curtain of a rock star’s decadent abode.
