Long celebrated as a tastemaker, The Umstead Hotel and Spa is bringing distinctive and distinguished new tastes to its Bar and Lounge this fall. They come in the form of an exceptionally rare cognac, Louis XIII, and a delectable cocktail inspired by the famous North Carolina Emerald, Carolina Emperor. The latter will be served from a new mobile bar cart, which will bring both cocktails and their mixologist directly to guests.

The 100-year old Louis XIII cognac comes from grapes produced in France’s Grand Champagne territory. Of 1,000 samples tested by the Cellar Master, barely a dozen are deemed worthy enough to fill the exquisite, hand-crafted crystal decanter designed for the cognac. Each 1.5-ounce glass is $250.

With the introduction of its new bar cart service in the Bar and Lounge, The Umstead is debuting specialty cocktails. The first is called Caroline Emperor, whose green color mimics the brilliant Carolina Emperor emerald, at 310 carats the largest emerald in American history. The emerald was found 14 feet below the earth’s surface in North Carolina in 2009. The cocktail it inspired calls for Hendricks Gin, Cucumber-Yuzu, Tonic, Liquid Nitrogen, and other unique ingredients.
